Summer is the perfect time for pretty cocktails! I had some extra blueberries to use up, so I made a simple syrup:
Throw a cup of sugar, a cup of blueberries, and 1/2 cup of water into a pot and bring to a simmer for 5-10 minutes. Strain through a sieve into a glass container and cool.
To make the beautiful drink pictured, pour some into a glass, add pineapple juice and rum to taste, and enjoy! I used a 1:2:1 ratio, but it was quite sweet- next time I'll add some soda water.
You can use this simple syrup in anything! You don't have to use it in alcoholic drinks alone- mix up some beautiful blueberry lemonade or Italian soda!
You can make simple syrup with any fruit or flavors- add some herbs to change up the flavor! If you want a thinner syrup, use a 1:2 ratio of sugar to water.
